Triple-Star Tabbouleh

Yield 4 servings

Tabbouleh:

  • 2-3 cups flat parsley, chopped
  • 1/2 cup mint, chopped
  • 1/4 cup basil, chopped
  • 1 small red onion, diced
  • 2-3 scallions, chopped
  • 2 tomatoes, seeded and chopped small
  • 1 cucumber, diced
  • 1 orange or yellow pepper, diced

Dressing:

  • 1 lemon, juice only
  • 4-5 tablespoons olive oil
  • 1-2 cloves garlic, chopped
  • 1/2 teaspoon salt
  • Black pepper

1. Combine salad ingredients and dressing ingredients and toss them together.

2. Serve and enjoy!
