Raw Blueberry Cheesecake

Ingredients

For the base:

  • 1/2 cup of almonds
  • 1/2 cup of pecans
  • 1 cup of dates (about 12 pieces)
  • 1 teaspoon almond butter

For the filling:

  • 1 cup of cashews
  • 1 cup of blueberries
  • 1 banana

 

Directions

1. Add everything for the base to a food processor and blend until you get a dough. It could take a few minutes depending on how powerful your food processor is.

2. Put baking paper or cling film in your baking form or use a silicon one and press the dough into the bottom. I used two small forms, but you can use just one big form too.

3. Put everything in your food processor for the filling and blend until smooth, then pour onto the base. Set in the freezer for about 3-4 hours. Tt should be firm enough to slice up then.

4. Enjoy!
