Delightfully Green Tahini Dressing

Yield 1 1/3 cups
  • 1/3 cup tahini
  • 3/4 cup water
  • 1 small garlic clove, chopped
  • 3 tablespoons lemon juice
  • 1/2 – 3/4 teaspoon salt (I like it on the saltier side, so I used 3/4)
  • Black pepper, to taste
  • 1/2 cup spinach, leaves only, packed
  • 1/4 cup parsley, leaves and stems

1. Blend all ingredients in a high speed blender or a food processor until smooth. Dressing will keep in the fridge for up to 6 days.
