Mexican Spiced Chocolate Covered Cashews
Ingredients
- 2 cups raw cashews
- 1 cup dairy free chocolate chips
- 2 tablespoons non-dairy milk
- 3/4 teaspoon ground cinnamon
- 1/4-1/2 teaspoon chili powder
- 1/8 teaspoon salt, optional
Directions
1. Line a baking sheet with parchment paper.
2. Spread out cashews in an even layer on the baking sheet. Set aside.
3. Heat chocolate, non-dairy milk and spices in a double boiler, stirring often until smooth. Do not walk away from the chocolate mixture as you don’t want it to burn.
4. Drizzle chocolate over the cashews until desired coverage.
5. Place baking sheet in freezer for 20-30 minutes until chocolate is set.
6. Break apart into smaller pieces and get your snack on!
