Lemon Coconut Bites
Ingredients
- 1 cup oatmeal
- 1/2-3/4 cup shredded dried coconut (plus more for dusting)
- 3 tablespoons fresh lemon juice
- 2 tablespoons fresh lemon zest
- 1 tablespoon chia seeds
- 6 to 8 Medjool dates or 10-12 smaller dates
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil
- Pinch of sea salt
Directions
1. Throw all ingredients in the food processor and process until smooth and the mixture sticks together.
2. Roll the mixture into bite sized balls. Or use a 1-2 tablespoon melon baller with a quick release. Dust with more coconut, if desired.
3. Store in the freezer or in an airtight container in the fridge.
