Beat the Heat with these Healthy Homemade Popsicles

It probably comes as no surprise to you that I’m head-over-heels in love with smoothies. There’s just nothing better than a refreshing blend to kick off a busy day or enjoy as an energizing afternoon snack.

Plus, making smoothies is a chance to be creative—we can add juicy fruits, healthful veggies, creamy nut milks and whatever other fabulous plant-powered goodies our hearts desire! I like to think of each one I whip up as its own work of art.

That’s why I’m so excited to bring you today’s recipe! The Test Kitchen Tuesday team and I went a little wild and turned two of our all-time favorite smoothies from my cookbook, Crazy Sexy Juice, into delicious homemade popsicles. Now you can do more than just sip on your smoothies—you can lick ‘em, too!

And here’s the best part: These frozen desserts are super healthy. They’re absolutely packed with tons of good-for-you nutrients.

First up is the Creamy Dreamy Orange Popsicle. The star of the show is… You guessed it, orange! If you want some extra immune-boosting, cancer-fighting, skin-protecting vitamin C, this pop’s for you. You’re gonna love each and every smooth, citrusy bite.

Then there’s the Decadent Dairy-Free Fudgesicle. Chocolate lovers, prepare yourselves! This rich, succulent pop is about to be your new favorite. Plus, the special hidden ingredient, spinach, is a great source of antioxidants and iron. It also happens to be one of the best sources of lutein, which protects your eyes and helps prevent macular degeneration. Cool, huh?

I like to make a whole bunch of these homemade popsicles at once and keep them in my freezer for super hot days (or, let’s be honest—whenever I need a little somethin’ sweet!). They’re also a fun, unexpected dessert to serve when you have guests over. Take it up a notch by making some of the optional chocolate dip I’ve included below, then let everyone dip and decorate (with dried berries, chopped nuts, coconut flakes, etc.) their own pop. Yum!

Creamy Dreamy Orange Popsicle

Based on Orange Dream Smoothie from Crazy Sexy Juice
Makes 7-10 popsicles

Ingredients:
1 orange, peeled, pith removed, and cut into quarters
1 banana, frozen
1/2 teaspoon vanilla extract or powder
1/8 cup raw cashews
1-1/2 cups nondairy milk of choice

Instructions:
1. Wash and prep all ingredients.
2. Blend till smooth and serve.
3. Carefully pour into popsicle molds and freeze for at least 4 hours.

Decadent Dairy-Free Fudgesicle

Based on Chocolate Avocado Smoothie from Crazy Sexy Juice
Makes 8-10 popsicles

Ingredients:
2 small bananas, frozen
1 to 2 pitted Medjool dates
1-1/2 tablespoons cacao powder
1/4 Hass avocado
1/2 teaspoon vanilla extract
1 cup baby spinach, tightly packed
1-3/4 cup almond milk or nondairy milk of choice

Instructions:
1. Wash and prep all ingredients.
2. Blend till smooth and serve.
3. Carefully pour into popsicle molds and freeze for at least 4 hours.

Optional chocolate dip:
3 tablespoons melted coconut oil
3 tablespoons cacao powder
1 teaspoon maple syrup
1 pinch sea salt

Notes:

  • Need popsicle molds? Here’s one great option!
  • If your pops feel stuck when they come out of the freezer, run them under water for a few seconds.
