BBQ Chickpea Sloppy Joes

Ingredients

  • 1 (15-ounce) BPA-free can garbanzo beans, rinsed and drained, half mashed with the back of a fork
  • 1/4 yellow onion, minced
  • 2 medium carrots, chopped
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup homemade BBQ sauce, or use store bought
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon brown sugar or sugar substitute of choice
  • 1/2 teaspoon sea salt
  • 4 gluten-free hamburger buns, lightly toasted

 

Directions

1. In a skillet over medium-high heat, sauté the onion, carrots and bell peppers with vegetable oil until they are soft (approximately 5 minutes).

2. Add the chickpeas, tomatoes, BBQ sauce, salt and sugar. of choice Mix well.

3. Bring the mixture to a boil and then simmer, uncovered, on medium-low heat for 15 minutes, or until most of the liquid has evaporated. Add more salt and pepper at this point, if needed.

4. Add the BBQ chickpeas inside each toasted bun.

5. Enjoy!
