Vegan Apple Pecan Crisp

Filling

  • 3 granny smith apples
  • 3 pink lady apples
  • 2 teaspoons cinnamon
  • 1/4teaspoon nutmeg
  • 1/4 teaspoon ground ginger

Topping

  • 6 tablespoons coconut oil
  • 1 cup pecans
  • 3/4 cup almond flour
  • 2 tablespoons unrefined maple syrup
  • 1/2 cup unsweetened coconut flakes
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon sea salt

1. Preheat the oven to 375 degrees.

2. Cut the apples into 1/4-inch slices.

3. In a small bowl, mix together the filling spices.

4. Place apples in a 9-inch baking dish. Toss with filling spices to coat. Set aside.

5. For the topping, put all topping ingredients in a food processor. Pulse until everything is fully ground a crumbly paste is created.

6. Spread the topping over the apples to fully cover.

7. Bake for about 50 minutes, or until apples are bubbly and topping is crisp.

8. Let sit for at least 30 minutes to cool before serving warm, and enjoy!
