Dulce de Leche Bars

Yield 12 squares
  • 2 cups almond meal from almond milk
  • 1 cup Lucuma powder
  • 2 cups pitted dates
  • 1/4 cup agave nectar
  • 1 vanilla bean
  • 1/4 teaspoon sea salt
  • 1/4 cup coconut oil

1. Put everything in a high-speed blender or food processor and blend until smooth, scraping the mixture down with a spatula as needed.

2. Spread into a 9-inch x 9-inch pan and place in the freezer for at least two hours.

3. Cut into squares.
