Zesty Corn Salad

-2 ears of corn (remove the kernels and toss the cobs in your compost bin)
-1 red bell pepper
-1 purple onion
-1 bunch cilantro
-1 lime – juiced
-1 tablespoon paprika
-1 teaspoon cumin
-crushed red pepper (optional)
Put corn kernels in a large bowl.
Toss the red bell pepper in the food processor (first I use the slicer blade, then put the S blade in to make smaller chunks), transfer to the bowl with the corn.
Next put the onion in the food processor (I used the S blade for this) and pulse until the onion is finely diced. Again, transfer to the bowl with the corn & pepper.
Next put the cilantro in the food processor (again, using the S blade) and pulse until finely chopped – add to the big bowl.
Mix all the ingredients together, then sprinkle with the lime juice, paprika and cumin (and crushed red pepper if you’re feeling feisty).
Mix it up again, and enjoy!

I Love it! I was unsure how i would feel about it because Im not a big fan of uncooked corn, but its good. i put more lime juice in it and am using it as salsa
I am thinking next time that i make it i may put some black beans in it. thank you
