Spicy Cashew Dressing

Yield 1-2 servings
  • 1/2 cup raw cashews, soaked in water for at least two hours
  • 1/4 cup cilantro
  • Juice of 1/2 a lime
  • 1 tablespoon ginger, peeled and chopped
  • 5-8 dashes hot sauce or cayenne, to taste
  • 1 tablespoon water
  • 1/4 cup extra virgin olive oil

1. Lightly pulse all the ingredients except the olive oil in a food processor.

2. With the motor running, slowly pour in the olive oil until well blended.
