PBJ Superfood Bars

PBJ Superfood Bars

Ingredients

  • 1-2 tablespoons of coconut oil*
  • 2 cups rolled oats
  • 1 cup oat groats
  • 2 teaspoons cinnamon
  • Handful of carob chips
  • 2 cups homemade nut butter (any nut will do, as long as it’s not too oily!)*
  • 1/2-1 cup sugar free/homemade cherry jam
  • 1/4 cup white chia seeds
  • 1/3 cup hemp hearts

 

Directions

1. Melt coconut oil. Line a square baking dish with parchment paper.

2. In a large bowl, mix the melted coconut oil, oats, groats, cinnamon, carob chips and nut butter with your hands until fully combined.

3. Press half of the mixture into the bottom of the prepared pan.

4. Cover with cherry jam, chia and finally the hemp hearts.

5. Gently press the top layer of the oat mixture onto the jam.

6. Once the jam is covered, press with a bit more pressure to really firm up the layers.

7. Pop the whole thing in the freezer until set (about an hour and a half).

8. Store either in the fridge or in the freezer, individually wrapped for ease and transport.

*Note: My nut butter is pretty low oil which is where the addition of coconut oil comes in. I really needed it to keep the whole batch sticking together. If you have an oily nut butter, I would either cut out the coconut oil or reduce the nut butter quantities.
