Lovely Pistachio (Superfood) Balls

Ingredients

  • 1 cup pitted medjool dates
  • 1/5 cup chia seeds
  • 1/4 cup flax seeds
  • 1/4 cup raw cacao nibs
  • 1/4 cup pink Himalayan salted pistachios
  • 1/4 cup mixed seeds
  • Pinch raw vanilla powder
  • Generous pinch pink Himalayan salt
  • 1-2 teaspoons maca

 

Directions

1. Throw all ingredients in the food processor and process until the dates are broken down and you can pinch the mixture together with your fingers.

2. Roll the mixture into bite size balls. I also like to mix things up by grinding up some nuts and then rolling some of the balls in them for an extra added crunch. You could also roll them in cacao nibs, chia seeds, cacao or anything you like!

3. Store in the freezer or in an airtight container in the fridge.
